Gingerbread men

anyone want to share a recipe i have made a version that wasnt very gingery and on lot that were rock hard - any clues or recipes, cheers

My dd made some during the summer holidays but I won't share the recipe with you as they were rather soft and more cake than biscuit. I don't know whether that was the recipes fault or the fact that she did them with my MIL who is not a great cook. Just wanted to say that if the not very gingery ones were OK otherwise, why not just add more ginger to the recipe?

cook them for less time and let them harden once they are out of oven and when rolling them out use ginger spice added to flour to stop the mixture sticking to the table for an extra gingery taste or add a bit of freshly grated ginger to the mixture.

There's an earlier thread entitled 'Soft Gingerbread Men' which says you put in too much sugar or syrup, I agree. DS and I make GBM on a regular basis and definately don't over do the syrup or you get gingerbread rocks although they will soften up in a day or two. There is another thread on GBM which I can't find but I posted my recipe on it, I would post it again for you but it's packed ready for my house move!
