to feed my family jacket potatoes for the next month?

So we like jackets, have them maybe once a week/2 weeks. Was on my shopping list.
Tesco had a BOGOF special offer on a large bag, too good a deal not to buy. But now I have 2 huge bags of baking potatoes, and there is only me, DD1(age9) and DD2 (age3).
So AIBU, to cook them every night Grin
Suggestions for toppings please, or what else I can do with baking potatoes (I already know from experience that they don't mash or roast well!)

You can peel them and do other things with them too you know! They do mash, roast or chip perfectly well.

Do they though, the last time I tried to mash baking potatoes, it was horrid.

YANBU (this should probably be in Food though). What I do is bake them as normal, cut in half, scoop out the flesh, add onion, cooked bacon/ham, cheese and maybe spinach, pile them back in the skins and cook til golden. You can then freeze them like this or eat them hot.

They are nice turned into wedges or chunky chips (just cut into thick slices, plenty of olive oil, salt and pepper and cook at high temp).

You can also slice them thickly and make a nice cheesy gratin or creamy dauphinoise.

I hardly ever do them, as DD choose jacket and tuna for lunch at school so often.

I like them with cheese and beans (she hates beans), and mashed and stuffed back in with bacon.
Smoked mackerel pate is nice too but even better in a baked sweet potato

Sliced and used as topping for moussaka? I think that they work well in spanish omelette. I am also thinking that chilli, cheese and spring onion, sweet and sour veg (sounds weird with jackets, but nice!).

That wouldn't be a 7.5kg bag? I bought one of those the other week and they roast, mash and chip well!

You can make rosti's or Gnocchi?

I have made a veggie chili to go with jackets this week.

Veggie chilli is fab with jacket potatoes.

Cook leeks/onions/mushrooms/sweetcorn, etc and stir into a cheese sauce.

low fat option : cottage cheese and beans (lovely)
chilli or bolognese both make nice toppings for Jacket spuds.

we also mash, bake, boil and roast 'roasting' spuds.

Make hash browns, or at least what we call hash browns. Grate some potato, bundle in a clean tea towel and squeeze to get all of the water out, pan fry with some chopped bacon until cooked then top with grated cheese - makes a nice alternative to mash.

Put them in a stew or casserole.

Get some leeks and do leek and potato soup.

Ok seeing as you asked so nicely Grin

1 x tin kidney beans
1 x black beans or any other beans you like
2 x tin chopped toms
diced onion
2 x diced pepper
crushed garlic, I use alot but I am a garlic fiend
Diced veg, up to you what you want to add. I used Courgette
Ground Cumin
Ground coriander
Chili powder
Sweetcorn
Fresh coriander

Saute onion, garlic, peppers and any veg you want to add
Once softened add beans and chopped toms. Fill each tom tin half way with hot water and add
Stir in cumin, coriander and chili (I guess what amount I need)
Bring to boil and simmer for 15/20 mins.
Add sweetcorn and simmer for another 5 mins
Stir in fresh coriander and serve!

I love jackets but no-one else in the house does! I have them with egg mayo or coleslaw.
Agree wedges are a good option - my three DCS all love this:
Roast wedges for 10 mins or so and meanwhile mix up two tins tuna, chopped onion, mayo,cheese, herbs etc. Tip part-cooked wedges into oven proof dish, top with tuna mayo mix and sprinkle with yet more cheese. Bung back in oven until done. Sounds gross but very tasty and cheap!!!

You need to pal up with another mum when I go shopping with one of my DS we always get the 2 4 1 offers then swap them over. Don't feed them taties for a week it may give them colic
