Why can't I have this? All the adverts seem to say I can, but when I wade through all of the website mambo jumbo, it turns out I can't do that.
I don't want a new phone evry three months either. Just not have to worry about top ups, and I want the free stuff :0
Surely it MUST be possible, but I can't find he way

Have a look at Giffgaff,choose the calltime you want and internet and texts are unlimited,they are owned by o2 and are only on the internet,no shops or call centres.Dh has been with them for 4 months now,he is saving £20 a month,I will be joining them as soon as I can escape from Vodafone

You need a Pay Monthly Sim-only deal,

You can usually transfer your number over to a contract, even if you change provider. You just have to contact your current provider for a code of some kind and then give it to the new network and they will do it all for you. You might be between numbers for a few days, though.
I'm on Orange, Dolphin I think, it's £10 per month unlimited texts, 30 minutes and 100MB internet.
You could get a sim only deal, or you could just refuse the handset upgrade when they offer it, or take the most expensive phone they offer on your plan and sell it on ebay or take it into one of those shops which buy phones. This is perfectly legal. You tend to get a decent amount for them in shops which sell them out again, if the phone is brand new.
Oh although, with an iPhone, you do need one of those special mini SIM cards, and I don't know if all networks offer these. It's worth phoning up to ask.
Or just move to Android
