Vegetarian wellington?

Dh and I are hosting a dinner party on New Years day, he's making beef wellington but I was looking for a veggie recipe as me and another guest are vegetarian, anyone got a good recipe? Also does anyone know if Wellington would work with gluten free pastry?

I haven't tried it with GF pastry, but:

Ingredients: (serves 4)
1x roll of puff pastry
1x butternut squash
1x tube of garlic purée or bulb of garlic
Stilton
Sage leaves
4x shallots (the big ones)
500g of parsnips
1x egg
Olive oil
Salt and pepper

Preheat oven to 200. Peel, deseed and chop the butternut squash. I do it into rough chunks of different sizes ranging from 1cm to 1 inch, so that you have some bits that are melty and some that hold their texture. Chop up the parsnips to similar sized bits. Squeeze the garlic purée or crush the garlic into half a cup of olive oil and stir through. Put the parsnip and squash chunks on a baking tray, season well then coat in the garlic oil, and roast for about 30 mins until soft and caramelised. Fry off the shallots until translucent.

While still warm, tip the squash, parsnips and shallots into a bowl with a large handful or chopped sage leaves and crumble in as much of the Stilton as you like. Mix well and leave to cool.

When cooled, roll out your pastry and spoon be mix into the centre of the rectangle. Beat the egg into a bowl, and brush the edges with the raw egg mix then fold the pastry over the filling and stick it down. Coat the entire outside of the pastry in the egg mix, then bake for about 30 mins on 180 until golden and crisp.

Not sure about gf pastry, were you going to make your own? This BNS & blue cheese mwellington is delicious.
