I have dinner to cook, I have chicken fillets ... I don't have any ideas!

So what can I cook tonight for my fussy lot? The 'no's' are curry, chicken chorizo pasta bake, pesto chicken. Got a store cupboard full of ingredients, stuff in the fridge but am sadly lacking inspiration!

Suggestions on a postcard please whilst I go and scrub bathrooms! Grin

Have you got cornflakes? Bash the cornflakes up, cut the chicken into nugget-sized pieces, dip in beaten egg and roll in the bashed up cornflakes. Squeeze a tiny bit of lemon juice over them, then bake in the oven - they don't take long. Mine love this.

Fahitas?

With some salad and cous cous?

Look in Abel and Cole. They have a nice recipe for Japanese chicken and kale which is lovely and even I was able to make it !

two big favourites here would be stir fry with noodles or tarragon chicken ( which is basically cooking chicken gently in ghee mixed with a lot of tarragon! ) with rice

You could make a nice mustard sauce or do a mini roast.
I like to cook my chicken breasts with a bit of olive oil and some thyme. Roast in the oven and serve with veggies, potatoes and yorkshire puds.
Do you they like Thai curry?
Chicken casserole?

Could you stuff with cheese and wrap in bacon or ham?

Sweet and sour sauce?

Got any wine and cream? Chicken in white/red wine sauce

BBQ chicken - mix red sauce and brown sauce to get a smoky(ish) sauce and add as much water as sauce and bung in oven for an hour.

Make breadcrumbs and mix with lots of parmesan, parsley and seasoning.

Melt a shit ton of butter and add a mountain of minced garlic.

Dip chicken in butter, then the crumb and then lay on baking tray. Drizzle with oil and cook on high for 15-20 mins.

We had this on Saturday and DD and DP have asked for it again every day since Grin. Incredibly moreish.

Coat the chicken in a spice mix like Tuscan or Moroccan.

Fry them in a shallow pan with about 1-2 cups of chicken stock. Towards the end add a dash of cream.

Simple but delicious.

Italian traybake.
Chicken, sausages, cubed potatoes with skin on. Add salt, pepper, Rosemary and lemon zest then sprinkle liberally with olive oil, 40 mins in oven and only 1 pot to wash.

Hunters chicken usually goes down well here. Wrap the chicken in bacon, cover in a barbeque type sauce and bake.
The sauce can be rustled up using store cupboard ingredients like onions, worcester sauce, ketchup or passata, balsamic, chilli powder. Sprinkle on cheese (cheddar or mozz) half way through cooking. Goes well with potato wedges.

Cut chicken breasts in nugget size pieces.
Have 3 plates ready.
Put flour, beaten egg, breadcrumbs on each of them.
Season nuggets with salt and pepper.
Roll each in flour then dip in egg and breadrumbs last.
Fry in hot oil but not smoking or they will burn, fry until they are golden colour. Turn only once. If oil is not hot enough then the brwadcrumbs will soak in and won't crisp.

Not met a single person who doesn't like them.

Chicken rarebit? Flatten fillets in a baking dish. For each fillet mix dollop of grainy mustard, handful of grated cheese and slacken with splash of milk. Press onto fillets and bake for about 25 mins.

Thank you all! I'm spoiled for choice here! Don't have peppers (boo Tesco!) so can't do fajitas which came to mind when I hit post an hour ago. Corny chicken (as its called here) is quite popular but I quite fancy Majestic's Hunters Chicken. Majestic ... re the sauce, do you fry the onions, make the sauce and then pour it over? Or do you chuck the raw onions in, bung the liquid ingredients on top and let it all cook together? Also, what oven temp for how long ... am thinking 180 for the chicken but potatoes would need hotter and longer?

Yes, fry onions and make the sauce up first. I forgot, maybe add a little sugar or honey to sweeten that sauce. I guess you could just chuck it all in without pre-cooking - I never thought of that, I'm sure it would be fine. I reckon it takes around 35 mins at 180. Yes, I would usually turn the oven up at the end to crisp up the potatoes for another 5 or 10 mins.

Stroganoff - need onion, stock cubes, worcestershire sauce, paprika and anything creamy so cream, natural yoghurt, creme fraiche, sour cream etc

Stuffed chicken - make small insert and stuff with cheese/toms/basil/whatever else you may have

Slice into mini fillets and marinadein tikka/paprika/any other spice and serve with rice salad and pittas if you have them

schnitzel - bash the fillets, breadcrumb them, grill and serve over spaghetti. put a tin of toms in a frying pan, add some sugar and balsamic vinegar plus whatever takes your fancy and reduce down, stir in cooked spag

Our faves are...

Fajitas
Tacos - fry or grill chicken pieces with lime and coriander, serve with shredded lettuce, diced tomatoes, grated cheese, sour cream, salsa or guacamole
Stir fry with sauce made from soy, sherry, cornflour, honey and sesame oil - with chopped veg whatever's in we usually have broccoli and sugar snaps - and rice or noodles
With tarragon, a littler chicken stock and cream/creme fraiche
Batted out and griddles served in a brioche burger bun with a rasher of bacon, lettuce and tomato
Curry many ways!

Mexican Chicken - cut into little pieces, sauté in a pan, add chili powder, tin of tomatoes, squirt of puree, salt, pepper etc. and cook down to a nice thick tomatoey sauce.

Serve with soft tortillas/wraps, with side dishes of grated cheese, shredded lettuce, sour cream /yogurt, grated carrot, guacamole, salsa, refried beans, peppers.....whatever you happen to have knocking about. Put everything in little bowls in the middle of the table, and let everyone create their own wrap.

Has been a Chateau Cointreau favourite for several years now.

I'm currently marinating chicken in honey, soy & Chinese 5 spice to grill later and put in wraps with salad and will do some crushed potatoes (part boiled new potatoes, crushed a little bit on a baking tray and put in the oven until crispy - yummy easy tea Grin

Tonight is sorted but I am always really stuck for chicken dishes which the children will actually eat so am delighted to have loads to try over the coming weeks - thank you all!

Majestic ... the sauce is delicious! I fried onion slices til really soft, added passata, garlic, maple syrup, soy sauce, smoked paprika. Worcestershire sauce - I could have stopped there - and a splash of red wine vinegar (tasted a tad better before that went in!) but my goodness it's tasty. Am serving with pasta Hmm because my lot are poor potato (in any shape, size or form) eaters! Thanks!
