...any suggestions? Don't want to make same old chicken fried rice. Thank you!

I Always make curry with mine, makes the chicken go super soft

Fry up ad dp calls basically a chopped and diced roast dinner cooked again in gravy (it's addictive)

Cook some mushrooms in butter, add some mustard, the chicken, chicken stock and some cream if you like. Stick it in an ovenproof dish, top with puff pastry, stick it in a hottish oven for about 25 minutes. You can line the dish with pastry too if you prefer it that way. If the sauce seems too runny, take a couple of tablespoons out, mix in some cornflour and then add it back and boil until thick enough. Just typing this is making me hungry.

Chicken pesto pasta.

Put pasta on to cook

In another pan melt a pot if Philadelphia cheese with a bit of milk / white wine / Lemon Juice to make a sauce

Add a spoonful or two o pesto.

When pasta cooked, drain and mix with the sauce.

Add chicken (or dry fry chicken in a bit of pesto to make it a bit crispy!)

Serve with Parmesan and garlic bread!

Saute a leek and some bacon/ham, add a couple of spoons of flour then milk to make a white sauce, season, add cooken chicken. Put into shallow dish, top with slices of garlic baguette and grated cheese, cook in oven.

I like leftover roast chicken with pasta. Make a nice sauce with onions, maybe bacon or pancetta, mushrooms, leeks, leftover gravy or a dash of cream. Yum.

The pie idea sounds fab too.

I make a pasta dish with leftover roast chicken and spinach.

Layer of steamed frozen spinach, layer of chicken pieces, layer of pasta shapes (twists usually) in a homemade tomato sauce then a layer of grated mozzarella and in the oven till the cheese is melty and browned.

I also make a sort of biryani-esque rice dish

In a heavy bottomed deep but shallow pan with a lid - Chop an onion finely, sweat till translucent and even a wee bit browned at edges, add a tablespoon of curry paste, add basmati rice to cover the bottom of the pan and the chicken chopped up, add boiling water (twice as much as the rice I usually use a cup of rice/2 cups water) a handful of frozen peas/green beans or whatever and cook with a lid on until the rice is done. We usually have chapattis with it.

I have also made chicken and mushroom pie similar to above with a sauce made from leftover gravy, some fresh thyme and a tablespoon or two of creme fraiche and rough puff pastry.

I make other ricey things with different kinds of rice like using paella rice and smoked paprika to make a kind of paella-ish thing with peppers and peas in or we have oven baked risotto occasionally.

We LOVE Creamy Lemon pasta here.

Put some pasta on to boil. We tend to prefer twists or penne.

Put the juice & rind of a lemon in a sauté/frying pan with oil and some mixed or Italian herbs.

Chuck in some mushrooms and fry them off for a few minutes, add your chicken and cook that until it is thoroughly heated through, add cream. Add the pasta and serve. Top with Parmesan cheese.

This is ALWAYS my first choice with leftover chicken.

Other common one, still with pasta, is to make a cheese sauce. Stilton, Danish Blue, or double Gloucester are all popular choices and mix that with sautéed mushrooms, chicken and pasta. Yum!!!
