Left over chicken,sweetcorn,carrots,parsnip.Can I make a soup?

So title says it all really, am a crap cook, but would love to make a soup, the chicken's cooked, but the veg isn't, what are your best ideas please?

Yes, absolutely!

Chop the carrots and parsnips into chunks and sweat in some butter with the lid of over a low heat fro about ten minutes.

Then pour in some stock (a litre or so will make enough for four peopel, and oxo is fine), add teh chicken and sweetcorn and bubble away for twenty minutes.

You can either have it as a broth as it is, or cool it slightly and whizz it with a blender. Add some seasoning and it'll be lovely.

You will need to start off with a finely chopped onion and preferably a stick of finely chopped celery sauteed in butter, before you put the other vegetables in, otherwise your soup will taste of precisely nothing.

do you have garlic and ginger?

fry little garlic and ginger until its a little coloured. add pint of stock (from a stck cube will do)

add chicken and sweetcorn and leave to simmer (about 5 mins). then mix 1 tablespoon of cornflour with water and add it to the soup.

then ( this is optional) whisk an egg with lemon juice and drizzle into the soup.

Viola: chinese chicken and sweetcorn soup! You will never buy it again, its so simple and quick to make.

littlebit that sounds lovely, maybe next Monday!

So, had no onions, so sweated parsnip and carrot in butter with onion powder, thyme and sage (?!)

Added stock, chicken and sweetcorn and bubbled, then whizzed, me and DD are now scoffing away and it's bloomin lovely!
