I would cook the leeks and cook and mash the sweet potato, blend in together with the tuna. Make into fish cakes and pan fry - serve with salad.

Thanks for the replies...even more unsure now grin

No coconut milk or bread. I like the sound of the potato gratin but have no cream.

Will have a rummage in the freezer to see what delights are lurking at the back!

Tuna and leeks in cheese sauce is fine, but I'd do it with pasta not sweet potatoes.

Tonight's dinner - tuna and leeks in white/cheese sauce with sweet potato mash on top.

Does it sound edible? White sauce or cheese sauce? I also have frozen peppers, mushrooms and possibly a few other random ingredients lurking in the fridge/freezer/cupboard.

The leeks and sweet potatoes need using up ASAP so any other suggestions to make a yummier meal would be gratefully received! grin
