Chicken breast fillet fantastic meals ideas

Does anyone have any wonderful ideas what to do with chicken breast fillets for dinner today, to be suitable for a family!!
Would love to hear some new ideas x

Not sure about fantastic, but chicken cacciatore or chicken Parmesan are quite easy to do and very tasty! Lots of recipes for each online.

Favourites in our house is sundried tomato and spinach

fry the chicken in the oil of the sundried tomato, add the tomato and at the end add spinach so it just wilts.

Marinated in lime juice and chilli then cooked with a bit of stock and some coconut milk. My children love this.

Stuff with mozarella, tomatoes and a squirt of balsamic glaze. wrap in parma ham and bake for about 25mins or so.

I serve.mine with salad and dauphnoise pots pre prepped ones from Asda for shame

Bit late but we like this one. I swap the prunes for apricots and add chickpeas. Next week maybe?!

Moroccan chicken with couscous : -

Serves - 6 people
Prep Time : 25 minutes
Cooking time : 45 minutes

2kg/4lb chicken (drumsticks and thighs)
2 large lemons
1 heaped tsp ground cinnamon
1 heaped tsp ground ginger
1 heaped tsp ground cumin
1/2 tsp cayenne pepper
pinch of salt
1 large chopped onion
3 chopped garlic cloves
2 red peppers - deseeded and finely chopped
12 cherry tomatoes
500ml/1 pint chicken stock
15 - 20 stoned prunes
3 tbsp runny honey
250g/8oz couscous
handful of lightly toasted almonds
2 tbsp chopped parsley

  1. Start by preparing the chicken. Place the rind and juice of one lemon into the base of a large flat dish. Add the cinnamon, ginger, cumin and cayenne pepper and a little salt. Rub well into the chicken pieces, and marinate for as long as possible.

  2. Heat oil in a large saucepan and brown the chicken pieces. Take out and put aside. Gently fry the onion, garlic and red pepper. Add the tomatoes (I assume you chop them but it doesn't say ) and the chicken stock and bring to just below the boil. Put teh chicken back in the remaining marinade. Cover and simmer for approx 20 mins.

  3. Add the stoned prunes and cook for another 15 - 20 mins. Add the honey and 8 thin slices of lemon. Cook for a further 15 - 20 mins.

  4. Cook the couscous as on packet, allowing 2oz per serving. Gently toast the almonds in a small frying pan with no oil.

  5. Serve the chicken pieces on top of the couscous and generously ladle over the sauce. Sprinkle with chopped parsley and the almonds to serve.

Hunters chicken

Slice your chicken breast half way through and add some strong cheddar, cover in barbecue sauce and bake until cooked

You could also, just put the cheese on top then hold it all together with bacon. Which is lovely :)

Use a cook in barbecue sauce, not just a bottle of stuff.
Sorry I don't have the recipe for bbq sauce,

Also parmesan chicken is lovely,
Slice chicken breast and fill with parmesan,bash it until its flat then wrap in parma ham and pan fry until cooked :) about 5 mins on each side

Pesto & goats cheese stuffed chicken breast :-)

I bash the chicken breasts out with a meat tenderiser, then brush homemade pesto (handful of basil leaves, glug of olive oil & 2 cloves of garlic all whizzed together) over the chicken quite liberally. Then I either use goats cheese or mozzarella (could use any other cheese you have in the fridge I guess - maybe philiapelphia?) & put a few pieces of it in the middle. I then use (out of a jar from Lidl's) chargrilled red peppers & put a few small strips of these on the cheese, then rip another basil leaf & put that on top of the pepper. I then roll the chicken around the filling & wrap in parma ham or streaky bacon & roast in the oven on 190 for about 30 mins. MMMMmmmmhhh Delicisious! I have served with celeriac dauphinoise, roasted veg & cheesy leeks for a dinner party or pesto pasta with the kids!! Always a winner & gets loads of compliments - even from the dc's.
