Realised that what I think is salami in the fridge may not be just pork and I cant bring myself to eat it. We get through a packet of processed sarnie meat a week and I am going to ditch this habit. But what are instant and affordable alternatives?
cheese (but thats not good every day!) tuna (quite expensive) marmite (only I like that) meat from roasts (we have a roast each sunday so can have that meat for the first couple of days in the week, but it means one less main meal out of it) cream cheese and ???
make sure to simmer the gammon with celery and onion and a carrot and you'll get a good stock for lentil soup. re the tuna... a can is about £1.30 max, mix with mayo, grated cucumber (squeeze water out) and a grated carrot (and a bit of grated red onion and capers if you have/like them) and you easily get a week's worth of well-filled sarnies out of that.
