Beet or cane? For marmalade.

Not being yet allowed to drive after ankle surgery, I asked DH to purchase and lug home a quantity of (specifically) cane sugar for my marmalade. Accordingly the dolt brought home 5kg of beet sugar.

Do you think it will matter or shall I send him straight back to the fecking shop?

Could a scientist tell the difference? Seriously, it's all sucrose isn't it?

Well, I think it behaves differently in the jam/marmalade and that beet sugar is cloudier.

Fair enough if you have noticed a difference. I don't make jam!

I am pleased to report that the 5kg of beet sugar made 25 jars of most successful marmalade (some seville orange, some lemon) with no obvious difference from cane sugar. Looks like I was wrong.
