Please help, any ideas for a cake to make on Thursday but to eat on Monday???

I would have thought carrot cake would work. As long as you keep it in the fridge, it will stay good, and as it is moist it won't go stale. Then just put the icing on, on the day. Same would be true for other moist cakes, like ginger cake.

If you want to do a more traditional sponge, I'd just freeze it, then add the filling and icing on the day.

I am making a cake for my aunt's birthday on Monday, but Thursday is the only day I have the time to make one. Any ideas as to what would still taste yummy?
