If you have lots of good dark chocolate, google search for Green and Blacks Maya Gold Choc Mousse cake. Doesn't have to be G&B choc, or maya gold which is kind of orangey spice flavour although it is very nice. Freezes well too. Very rich, mind.

What about custard or baked egg custard such as Clafoutis This recipe is for a small portion but you could increase the volumes.
Otherwise, Pavalova uses a lot of egg whites and is yummy. Nigella made a nice coffee pavalova on her recent series that I have been meaning to try out!
