I saw an easy/cheat's cheese sauce recipe a while ago, anyone know it? Or any others?

Cheese sauce in the microwave is dead easy.

Grate a load of cheese and use frozen for sprinkling on pasta bakes, gratins etc before putting in the oven.

I like to do a load of breadcrumbs, parmesan and chopped flatleaf parsley at once - stick in a tub in the freezer and use from frozen to top macaroni cheese etc.

How?

Just like in a pan! Use a pyrex jug. Melt your butter for a minute or so in the microwave. Stir in your flour. Add your milk bit by bit, stirring it. Whack it on medium power in the microwave for a few minutes. Stir it. Whack it in for more - watch that it doesn't boil over (so don't fill your jug too full). Stir it. Add cheese, s&p, grainy mustard, herbs if wished. Use.

I do a cheat cheese sauce that's good for lasagne topping...

Cornflour dissolved in a little milk in your jug,
Top up with milk
Blast in microwave til thick
Add cheese and stir

I wouldn't use this for cauliflower / macaroni cheese as a bit 'cornfloury' but so easy for lasagne / moussaka
