Chicken casserole for family & weaning?

Hi,

I am trying to menu plan, so I can order my food shopping and wondered if any of you lovely ladies have a chicken casserole recipe that is suitable for feeding husband, 2 kids one who is a bit fussy and also to let my 6month old throw all over the floor attempt to eat?

It could be a slow cooker recipe (bought my mum a v expensive Cusinart one that she never uses, so I'm going to steal ask if I can borrow it for a bit)

I don't really follow recipes, just chuck it all in! I've made a chicken casserole with chicken thighs, butternut squash or sweet potato, leeks, red onion and garlic losalt chicken stock, put the slow cooker for a few hours and then if it needs thickening could add some creme fraiche or ricotta cheese. Then depending whether you are BLW or puree you can blend baby's portion or use bread to dip into it

Also do similar to ceeveebee's suggestions. I add fresh rosemary so DH and I don't miss the salt so much.

onion
garlic
chicken (breasts/ thighs/ drumsticks)
sweet potato
rosemary if you have
chicken stock (i use kallo - they do have salt in but i make with only one cube - i.e. more than twice the water recommended, you can also find salt free ones)

Thighs are good - in metal casserole soften the onion and garlic, brown the chicken, add chopped peeled sweet potato, make the stock in a jug pour over the chicken and potato add rosemary(add more boiling water to cover if required) lid on into oven for 1:30 (200C)

frying/ browning may be uneccesary.

should work in a slow cooker (time equivalent from teh cooker manual)

I'm with ceeveebee - chuck it in either a slow cooker or an oval roaster if you have one. I cook on gas so am unsure about temperatures - if I'm cooking it in the oven I tend to chuck it all in and then put the lid on and cook it on gas mark 2 or three for most of the day!! My oven has a slow cook option too so I sometimes put it on that too. Virtually cooks itself!! You can puree it for your youngest too. I did that all the time when my three were growing up - easy healthy home cooked meals too!!

I made my 6mo Annabel Karmels chicken with sweet potato and grapes and it was so nice I made some more for us! When I made ours I just increased the quantities and didn't puree the chicken, just the sweet potato, grapes, onion and some carrots I added as an extra vegetable.

Chicken, Sweet Potato and Grape Puree
Ingredients
3 Tablespoons onion, peeled and chopped
1 Tablespoon olive oil
125g boneless, skinless chicken breast, cut into 1 inch cubes
1 sweet potato, chopped into 1 inch cubes
100ml unsalted chicken stock or broth
6 seedless grapes (we used red, however I’m confident either will be fine)

Preparation:
Saute the onion in the olive oil until softened but not colored.
Add the chicken and saute for 3-4 minutes until browned.
Add the sweet potato and chicken stock.
Cover and simmer for about ten to twelve minutes or until the chicken is cooked through.
Add the grapes and puree in a blender, food processor, or food mill until desired consistency.
Serve warm. Suitable for freezing.

Chicken with sweet potatoes and grapes sounds rather... odd.

You may want to reduce salt from standard recipes, but I wouldn't worry too much about stock etc because the proportion a baby is going to eat will be tiny. Salt is easy to reduce or leave out and if it tastes bland to adults you can add more salt on your plates.
