Hi. I need a couple of really good soups, dairy free but to share with other peoplke with no intolerances. Any recommendations?
carrot and red pepper is good - sweat off an onion and 2 peppers in a little olive oil, add 3 or 4 carrots and a pint of stock (I use 1 chicken/1 veggie oxo cubes) simmer for 20 min, liquidise, eat hot or cold.

Leek and potato. Chop leeks and potatoes, one medium leek per two people, plus two medium spuds.Sweat in a little oil, add stock, chicken or veg, and cook until the spuds are done.I don't puree this soup. I like it chunky and it's so tasty and easy.
Roast butternut squash (unpeeled but cut into chunks). Sweat 1 medium onion in butter for 7 mins, then add 1 tap ground cumin & a clove of chopped garlic. Cook for another minute until fragrant. Add roast squash & 600ml stock. Boil for 10 mins then blitz. Really really good!
