Vegetarian family meal ideas

Lots of hearty winter stews and soups, curry, pies, ratatouille etc.

How old is your DS and is there anything he doesn't particularly like?

Alas my two DCs have left home now but family favourites remain; sweetcorn fritters, all sorts of veg curries, veg or lentil lasagna, hearty soups full of beans and veg, things involving quorn mince so lots of recipes adapt with this) cheese souffle, mushroom, onion and pea risotto, butternut risotto and loads of puddings!

sweet potato quesadillas always go down well in here. I put the recipe on here somewhere. Also slow braised cabbage with pasta (it's on here somewhere as well.)

Pasta e ceco is v. easy, just pasta with chick peas, lots of garlic and olive oil.

Potato and lentil curry - onions, potatoes, red lentils, curry powder, coconut milk and water.

I have posted quite a lot of recipes on here, if you can be bothered looking.

There have been similar threads recently, so you might find loads of good ideas about veggie meals on previous chats. If you searched for my name, you would also probably come by a list of some of our family favourites. These include curries, Lentil Bolagnese, Moroccan carrot and chickpea stew, Vegetable stew with dumplings.
I'm getting hungry whilst just thinking about these...good luck!

If you do a search with my name, you might get some recipes. I do wraps with butternut squash, spinach and chickpeas which are v easy and v nutritious and go down well with my teenage dds. That's deffo on here somewhere.

My veggie chilli is on here somewhere too, but it does require a lot of chopping.

Easy baked paella or risotto.

Chickpea curry.

Dahl.

I do a veggie Shepherd's pie with quorn mince (the only way I can stomach the stuff) and make the mince part of it in the slowcooker, so it's dead easy.

Sausage casserole dead easy and comforting.

Lentil soup.

I get most of my recipes from bbc good food website. You can filter the recipes according to diet- lots of good meals like curries, veggie shepherd's pies, greek pie and lasagnes. I've also been using HFW's Veg Everyday book recently which has not let me down- things like bean 'wraps', bubble and squeak and pasta with kale (tastes better than it sounds!) smile

DP usually does all the cooking. I've been totally spoilt!

He is very busy atm (in final year at uni) so I'm going to stage a kitchen mutiny and take over for a while! Only problem is it's been so long since I've cooked regularly I don't know where to start! (I often cook DS's meals for him, simple stuff, but not family meals where we eat together).

I don't want to just copy what DP does, as he's so good at it! I'd rather make my own stuff.

We're veggie (well, DP and DS eat fish). I'd really appreciate some (fairly simple) veggie family meal ideas. Any help gratefully accepted!
