Favourite nutritious meals, to heck with the calories!

What're your tastiest nutritious dishes? Calories irrelevant!

One of mine is chorizo stew...

Glug of oil, heat and add...
Sliced onions
Couple of garlic cloves
Chorizo
Dried chilli flakes
Sweet potato
Carrot
Courgette
Any other veggies you fancy
Then add...
Passata or tin of tomatoes
Glug of worcester sauce
Glug of red wine
Glug of water or stock and simmer
Lastly, add a tin of your fav beans

Yum!

Homemade guacamole and polenta chips

2x very ripe avocados
1x big bunch coriander
2xchili
2x lime juice

Polenta
75g dry polenta (cornmeal) mixed with water
spread out on tin foil and grilled until crunchy

Dip or spread guacamole and enjoy :)

Pressure cooked mushrooms and black beluga lentils in stock and garlic
Big piece of grilled or baked oily fish
Roasted beetroot
Salsa verde
Spinach Tomato cucumber salad

Chicken parmesan :
One chicken breast each, wrapped in naice ham
cover in thinly sliced mushrooms.
Into a saute pan with a ton of olive oil and butter
cover with seasoned grated parmesan
simmer - basting regularly - for 40 mins
serve with green beans, salad, home made bread and white wine.

Corn Salsa

2x tin sweetcorn (in water)
1x red onion, finely chopped
big handful of parsley
lemon juice
1 red pepper finely chopped
1 clove garlic, finely chopped

Mix it all together and serve with warm, crusty ciabatta and, if you like, a nice fillet of grilled plaice (scattered with lemon verbena)
