If the first line is for eg:

Betty is eating an apple.

Should the second be:

"Can I have a bite?" said Bob

Or

"Can I have a bite? says Bob (that sounds weird!)

I know I sound incredibly dense but I've got my tenses in a muddle!

Oh, tenses have a habit of getting in a muddle.

Present tense: "is eating" + "says" or "asks"

Past: "was eating" + "said" or "asked"

Yes that does help. I wasn't sure if it sounded right to say "says Bob" even though that would seem to be correct.
