Pad see ew: these quantities serve 2 so multiply up accordingly
2tbsps sunflower oil
3 garlic cloves
150g pork / chicken fillet / prawns
2tbsps light soy sauce
1.5tbsps dark soy sauce
1 tbsp caster sugar
300g brocolli
2 eggs
2 servings of ready for wok noodles (I use either the udon or thick flat ones)
Add oil to hot wok and stir fry galic when hot. Add meat and stir fry for about 3 mins
Add soy sauces, sugar and brocolli and coook for a couple of mins
Make well in middle and add eggs - cook for a few mins stiring every 30 secs of so to break up
Add noodles and cook through - done!
Serve with tabasco and thai fish sauce.
Olive & lemon meatballs: serves 4
Meatballs:
50g pitted black olives (we use 85g tin of sliced black olives)
zest of 0.5 lemon
500g mince - I've done with beef pork and turkey and think pork is nicest
1 egg yolk
salk & pepper
Sauce:
1 tbsp olive oil
1 onion chopped
2 garlice cloves crushed / finely chopped
400g can chopped tomatoes
1tsp caster sugar
150mls stock
Mix meatball ingredients all together and make approx 16 meatballs
Heat oil in frying pan and cook meatballs until browned on all sides. Put them on a plate to one side.
Using same pan make the sauce. Add onion and cook for approx 5 mins. Add rest of ingredients and bring to boil.
Put sauce and meatballs into saucepan with lid and simmer for 30-45 mins
Serve with pasta (fresh tagliatelle is the best with this) / cous cous / crusty bread and salad. Sprinkle with zest from remaining half lemon
Easy tuna pasta: serves 4
1 small can sliced black olives
2 tins tuna
2 tins chopped tomatoes
small can / 2 tbsp tomato puree
Dried herbs of your choice
Sling it all in a pan, heat through and serve with pasta. If you have an onion or red / yellow pepper these can be cooked in olive oil for a few mins before adding rest of ingredients to add flavour.
