Christmas

help - I have three adult veggies for Christmas lunch and no main course for them!

I need inspiration. Sainsburys had nothing - I was banking on a ready made veggie main course being available. Any thoughts? It needs to be fairly easy and ideally mainly prepared in advance since I also have eight non veggies and the oven is going to be jam packed. Will have all the usual accompaniments, roast potatoes, red cabbage with apple, parsnips, roasted carrots, stuffing etc so needs to go with those!

Please help!!

Veggie haggis! I have never had a shop bought nut roast or similar that tasted nice and don't try the Tofurkey (even I couldnt eat that).

You can do the haggis in the microwave... It is yum with veggies.

Google delis sage and parsnip roulade recipe. It is absolutely delicious, can be made in advance and goes with all the Christmas trimmings that you'll have anyway.
It's a bit of a fiddle, but can be made in advance and then reheated in the
Microwave. If you don't fancy making it, you could give one of the veggies the recipe and ask them to make it and bring it along.

Open the pack, pop into a microwaveable bowl and cover with cling film. Cook for four mins on high, stir, pop back in for another four mins. It is slightly nicer if you boil it but it is much quicker this way, and isn't much extra work. I like it with mint sauce. Yum. Mcsweens is the best.

I think they probably do need a main course pelvic. Its DHs family. Previusly we've gone there for Christmas or boxing day lunch but I've taken on the tsak this year. I've never really paid much attention to what they've eaten before since I'm not veggie, but they definitely don't just have the accompaniments.

Delia Smith has a chestnut roast recipe in, I think, the Complete Cookery Course which is really lovely - just make sure you buy vacuum packed/tinned ready peeled chestnuts, don't even think about peeling them yourself .

It can be made in advance & reheated on the day.

Pelvicfloor is right. What you have as accompaniments is plenty. I remember going to a friend's for xmas and was fine eating all those. I was stuffed by the end.

As a veggie, I must admit that I am happy with a plate of roast veg and stuffing. Haggis is nice though and a bit unusual. Event the meat eaters like it.

I know what I am having for dinner tonight!

Try M&S. We normally get our main course from their chilled section.

Roasted peppers and other veggies with goats cheese in a filo pastry pie. Or subsitute mushrooms and cheese for the filling. I think either of these would go well with the roasties and traditional veg, too, which might help. Plus you can make the filling the day before, and assembling the pie is pretty easy - layer lots of sheets of filo into the pie dish, overlapping, but leaving plenty round the edges (and covering the base properly). Fill the pie, and fold the corners of the overlapped filo into the centre of the pie, then scrunch up more sheets of filo, and use them to top the pie with, so you get lots of lovely, toasty crisp edges of pastry. It sounds complex, but is really just laying and folding and scrunching - no neatness, just randomness.

M&S do a lovely nut roast.

Quorn do a 'roast' joint type thing which it simple and easy.

Tesco have a roast with stuffing style thing atm which is supposed to be good.

if you dont find anything else, I'm sure they will be happy with some quorn sausages and all of your trimmings.

I have a recipie which always impresses veggies at christmas, am sure you could amend to make easier. Quantities are for 8 so you would need to reduce. It is a veg holly wreath.

In advance:- saute 2 large onions in oil, add 4 crushed cloves garlic. Stir in 8oz button mushrooms, 1tbsp dried mixed herbs, 2 cans chopped tomatoes, 4tbsp tom puree. Bring to boil, simmer for 20mins + cool completely. When completely cool, mix in 4oz ground almonds (think I substituted for chestnuts), 4oz grated parmesan and 12oz cooked brown + wild rice.

wrap in puff pastry in holly wreath shape, chill. Cook gas mark 6 top shelf oven.

Another one which works well is chestnuts and peppers (and any other such veg, e.g. Corgette, aubergine) in a red wine sauce - think coq au vin but with chestnuts and veg. Fry or roast veg, add red wine with a little cornflour/flour, add shelled chestnuts (get ones in tin), and leave to simmer for an hour or two stiring occasionally.

Can't you ask them to bring something? I'm a veggie and usually if we go to SIL's I bring something - last year it was a stuffed buttternut squash similar to mrsravenstein's recipe, the year before I did a veggie cottage pie. I have also had the M&S nut roast before, it was really yummy, everyone else kept nicking some!

What about a mushroom wellington/tartlets? I'm sure M&S would do one, or make your own using puff pastry? Do the mushrooms in a cream sauce (creme fraiche) with some thyme and dash white wine?

Veggie Shepherd's pie is the easiest main course and can be made in advance, chilled and popped in the oven for 40 mins. Even meat eaters love it and everyone I've served it to asks for the recipe. Here it is. You could do a practice run as the whole family will eat it.
