Simple, but tasty, meal ideas!

When I follow a diet plan, I always get sucked into having the same meals, spaghetti bolognese, curries, chilli, etc because they're simple.

I'm currently following WW so bonus points for any WW recipes, but does anybody have any tasty, healthy recipes they can share that don't require a list of 20 ingredients?

Fish stew - make tomato sauce (with onion and peppers) but add some white wine and fish stock. Then add whatever fish you want. We used some frozen white fish, frozen smoked fish, and some prawns. Using frozen fish keeps the cost down a bit
