Suggestions for easy low carb breakfast

Hi, can anyone suggest a quick and easy low carb breakfast to replace my much-loved bowl of porridge in the mornings? I have my breakfast when I arrive at work, there is a microwave there but I need there to be no other 'cooking'. Oh how I wish there was a carb-free porridge! I also need it to be low fodmap to complicate things (as I have IBD and IBS).

Sorry but sweet corn, carrots orange and banana, whilst being healthy, are not low carb!

I have either coconut yogurt mixed with frozen berries and chia seeds (I mix it up the night before so the berries defrost and release some juice) or hard boiled eggs, chopped up with a bit of mayo and a handful of berries

I make my own kefir. I blend half a carrot, half an orange, 1/3 banana and some sunflower seeds with the kefir. Delish and I can take it to work in my water bottle.

I scramble a couple of eggs and then add sweetcorn and spinach for a minute and have that with a knob of butter and salt and pepper.

I have 2 hard boiled eggs, slice of ham and a few cherry tomatoes for my breakfast at work. Occasionally I will have a couple of cold chipolatta sausages instead of the ham.

Alternatively, yoghurt with nuts and seeds

Scrambled eggs with cheese and broccoli.
You can cook broccoli in a microwave too.

Low carb "porridge": combo of ground almonds, ground flaxseed, chia seeds, other seeds, nut butter, coconut oil, milk- you can vary quantities and obviously don't have to include all of the list.

I put 500ml full fat milk, a large banana and a spoonful of meridian peanut butter in a blender (handful of oats on occasion but obviously that’s not low carb).
Then pour into smoothie flask. Drink on way to work. Delicious and filling and takes ages to drink.

Porridge with protein powder mixed in as gives both fibre and protein.

Thanks for all the extra suggestions folks! I love the look of that recipe lucked! Will try it. And I'm amazed at how many things I can do with a microwave !! GrinI had no idea!

What about batch cooking dairy free egg muffins. here You would have to play about with the recipe for your IBS, remove the onions etc.

Be very careful indeed that you get enough fibre to replace what's in the porridge. Plenty of low carbers get chronic constipation.

You can also cook bacon in the microwave, just put a bit of kitchen roll on top and it goes nice and crispy. So you could do bacon and eggs.

I prepare Greek yoghurt the night before and put in nuts, pumpkin seeds, frozen blueberries and a little chopped apple. It’s delicious in the morning. Sometimes add a little bit of very low sugar chocolate spread.

OP

You can cook an egg in a ramekin or mug at the same time as the asparagus, then use the asparagus as you would a toast soldier.
