What is different about Bear Factory Workshops?

Dd's friend's mum invited us to go to one of these. I know it isn't a birthday party so not that.

What is the difference between a workshop and just going in and deciding you want a bear? And I assume if the children go I will have to let them all choose a bear?!

Anyone know? TIA
