Lone woman beach holiday mid to late Feb?

I've been told I need to take annual leave before the end of February and am a bit unsure re where to go. I'm a single woman and am looking for something super relaxing with minimal stress. The idea of just sitting around reading with a cocktail is amazing.
First thought was Canaries but not sure they'll quite have the weather late Feb. Have also thought of Dubai but a bit unsure re safety, and it's a bit unsettling that they do random PCR testing on arrival. Have also thought of the Caribbean (St Lucia, Barbados) but also worried about safety and the fact it might be really honeymooney, and Mexico (Cancun area). I'd want somewhere where I'd feel safe on the beach and not be bothered or harassed.
Would anyone have any recommendations of where to go?

If you're flying somewhere like Mexico or the Caribbean the time difference works in your favour - for example, when we fly to Barbados, the flight leaves London at 10.30 but arrives into Barbados around 2/3pm - so you get to your resort in time to unpack, have a quick swim and then have dinner. The flight back home leaves around 5pm, so your last day is a pretty full day around the pool/on the beach.

@LaSevillana the cruise ships disembark thousands of people on certain days at their destinations but as someone says if you are only in your resort then it won't bother you unless you are staying in a beach resort where they allow guests entry on a per day basis. There are certain destinations that are worse than others.

DH and I stayed at The Fives resort near Playa del Carmen just before the pandemic. It is a large and quite nice resort with lots of pools, lots of restaurants and helpful staff. The bed was very comfortable and the air con worked great (and quiet). We would go back.
The beach is nice too, lots of loungers.
Our room was main floor with a pool (swim up) right off the patio.
They had a taco truck at the beach, plus other restaurants.
We did go to Playa del Carmen for a few hours and frankly it was not that nice for us. A lot of scam artists around. Nothing dangerous, just annoying.
There are two Fives resorts. One is right in Playa del Carmen. The one we liked is further away on the beach.
There were many animals around, including monkeys. Lovely to see in the wild.

I went to Gran Canaria a few years ago (2019) and got an apartment down by the harbour at Puerto Rico so avoided the built up shopping mall. Teen dd was with me but stayed in at times so I was either on my own or with her. Weather was great, pool at apartment complex was good too- had a bar/restaurant and and Indian takeaway on site and I liked having a big balcony with a view over the harbour and a 2 min walk to the beach. Enjoyed a couple of boat trips and would really like to go back to Mogan which was more my thing, Wasn't the greatest resort fur culture etc but it served its purpose for me just flopping with a book with a pool, Sandy beach, sun and decent food and drink.

Came on to say the same thing. They do single rooms so quite a few people travel there on their own. You have the option to sit and eat with others each evening or obviously free to do your own thing, which ever you prefer.
