Where to go for a friend's 40th bday long weekend

A group of 4 of us want to go abroad next May or June for a very long weekend (Wed-Sun) to celebrate a friend's 40th. We're thinking of somewhere along the lines of Greece and to a boutique style hotel, possibly for over 18s where we can eat good food and drink cocktails. Budget is around £1000 each all-in and it would be for two of us sharing each room. Maybe an upmarket all inclusive along the lines of an Ikos but smaller

My friend and I had a wonderful long weekend in Nice. Can do really glamorous things there and travel down the coast to Cannes and St Tropez one way or Monaco the other.
