Bake-Off stress

My boss has decided we should have an end if term staff bake-off. I am a reasonable baker but what shall I make? All ideas and recipe links welcome.

A bakewell tart. Sweet shortcrust is easy to make and is very forgiving. Frangipane is surprisingly simple. The rest is just jam and icing. It looks more impressive than it is. Mine always goes down well.

I've won prizes with this one. It's from "Bake Me A Cake.as Fast as You Can" by Miranda Gore Brown.

225g castor sugar
3 large eggs
225g greek yoghurt
225g self raising flour
1 tsp baking powder
grated zest of 1 lemon
50g unsalted butter, melted
150g blueberries

For the icing

200g icing sugar
2-3 tsp lemon juice (I use more to get the right consistency)

1 Preheat the oven to 180C/350F/Gas 4. Line a deep 20cm springform cake tin with a cake liner or use non-stick baking paper.

2 Whisk together the sugar and eggs in an electric mixer on a high speed for about 4 minutes until thick and voluminous.

3 Fold in the yoghurt and then add the flour, baking powder, lemon zest, half the blueberries, and melted butter and fold again. Scrape into the prepared tinand sprinkle the remaining blueberries over the top.


  1. Bake on a low shelf in the preheated over for about 45 minutes or until the cake is golden on top and a skewer comes out clean.


  1. To make the icing use a knife to mix together the icing sugar and lemon juice, adding the lemon juice a little at a time. Remove the cake from the oven and allow to cool in the tin for about 20 minutes. Use a palette knife or spoon to spread the icing all over the cake.

@BetteDavies you are very welcome. I keep my best recipes in a Google Doc so I can print out/share as necessary. What I will say is that this is a fairly easy one to do, nice and squidgy, but also won't break your heart if you don't win because you won't have spent too long on it.

Don't pay extra for supersweet blueberries, the slightly tart ones are nicer. I do pay extra for top quality Greek yoghurt though. Yep valley or Tesco Finest for example.

I use salted butter btw, never had an issue with that tiny an amount. Also Yeo Valley is the yoghurt brand.
