Picnic and breakfast - cook/bake in advance ideas please?!

I would like to cook as much in advance for breakfasts and lunches as possible and have a toddler and 8 month old to feed for them. During the summer I am planning to get it in the morning and stay out most of the day so taking a picnic.

Any ideas for not too messy packable picnic ideas or breakfast things that are not cereal, fruit, porridge, pancakes would be great too please!

So far I have made breakfast muffins!

Mini frittatas - with whatever you have to hand, I've done bacon and mushroom, red pepper and courgette, cheese and onion etc, made them in a silicone muffin tin and frozen them, they defrost quickly and are easy to pick up and eat on the go or on a picnic

Oh how do you make them Costa just a car of frying them all together and sticking in the oven to crisp? Do you use egg to bind them?

I did exactly this when DD was born as our house was a building site. We'd be out 8-6 along with DSL who was two so lots of picnics.

Banana bread (freeze in slices)

I did mini frittatas a lot as well. No frying just mixing up eggs and a few bits and baking in silicone muffin tins.

Hundreds of different types of muffins and loaves.

Courgette polpette. Diced up courgette fried with garlic, then a bit of lemon zest, mozzarella, bread crumbs and an egg. Into balls and then bake.

Mini quiches of all kinds.

Quinoa balls/fritters

Apple and peanut butter sandwiches

Wraps with grated veg and cheese folded and fried in a pan then sliced into triangles

Various 'roll ups' made with wraps

Thousands of satsumas and avocados (as v portable and can be eaten straight from skin)

Mini Yorkshire puddings filled with stuff.

Chopped up mushroom and spinach in silicone muffin cases then pour batter in.

I fried off the ingredients just to soften them (and cooked the bacon) then poured beaten, seasoned eggs into the muffin tins and added the fillings, and grated cheese on top. They come out really well and don't take long to defrost so you can take them out in the morning and have them for lunch
