freezing eggs for mid winter

I sure over the cold christmas last year I had to buy eggs. I cant be wasting money again so I thought I could whip them up and freeze. Obvioulsy I wouldnt do them individually more x4 in a tub.

Will this technique have any effect on them for say baking? Do you have to add salt or nothing at all.

Can you remember when they stopped laying and started again? I have x4 girls.

Aha! well it so happens I got a book today (from the milkman!) called Take a box of Eggs. I've only glanced at it so far as been busy all day but have noticed a section on freezing eggs .

Eggs can be frozen raw. Cooked eggs don't freeze well. To freeze whole eggs, lightly beat, then add a 1/4 tsp of salt or sugar to stabilise, tip into a freezer bag seal and freeze. Remember to label the bag with the number of eggs and whether they are for sweet or savoury dishes (depending on which condiment has been added). Defrost frozen eggs in the fridge overnight and use them straightaway. As a guide it is useful to remember that 3 tbsp thawed whole egg is equivalent to 1 medium egg.

Only prob is I can't really imagine how you measure beaten egg by the tablespoon, sounds a bit messy!

1 moran and 3 cross (orange) cant remember the breed now. Yes it was when it was dark all day. Not sure if I can freeze enought for a month! But at least my bakes and bakes will contain my eggs.

Never done it myself but what I've seen recommended is separating the whites and yolks and freezing them separately. I assume this is just to give you more options in using them rather than because it won't work if you beat them up together.

What kind of hens have you got and how old are they? My Sussex only stopped for a month, over the very coldest part of winter - my others were hybrids so they didn't stop.
