Crispy roast potatoes
Prep time 10 mins, plus cooling
Cook time 30-40 mins
1kg Maris Piper or King Edward potatoes, cut into large chunks
2 tbsp vegetable oil
A good pinch sea salt
4 sprigs rosemary
Put the potatoes into a large pan of water. Bring to the boil and simmer for 10-15 minutes until just starting to soften. Drain in a colander and leave to dry out for 20 minutes.
Preheat oven to 220°C. Heat the oil in a large flame-proof baking tray over a high heat until almost smoking. Add the potatoes and carefully turn to coat in the oil. Sprinkle over the salt and the rosemary, then roast for 20-25 minutes until the potatoes are crisp and golden.
Beef and carrot stew
Prep time 15 mins
Cook time 21/2 - 31/2 hours
1 tbsp vegetable oil
500g braising steak, cubed
200g shallots, halved
15g packet thyme
500g carrots, chopped
1 litre beef stock
Heat the oil in a flameproof casserole over a high heat. Add the beef, season with salt and pepper, then sear for 3 minutes, turning regularly, until brown all over. Remove from the pan with a slotted spoon and set aside.
Turn the heat down, then add the shallots. Cook, stirring, for 10 minutes, then add the thyme, carrots and stock. Return the beef to the pan, then cover and bring to the boil. Remove the lid then simmer gently over the lowest setting for 2-3 hours until beef is tender and the liquid has reduced. Alternatively cook in an oven preheated to 140°C for 2-3 hours.
