French onion soup

  • 1 large onion

  • 568ml stock

  • 1 clove garlic optional


  1. Thinly slice the onion (and garlic if using) and fry in the butter until translucent and starting to brown.
  2. Add pint of stock and bring to the boil.
  3. Simmer for 10-15 minutes.

Handy Hint

Prepare croutons or crusty rolls while the soup is simmering, by the time you've finished it will be ready to serve.

    Excellent last minute on the hop lunch or supper dish. I always keep some part-baked rolls in the freezer to go with things like this.
