  • 1/2 sweet potato cubed, or replace with 1 sliced carrot

  • 175ml chicken stock enough to cover couscous

  • 1 handful frozen peas

  • 1 tsp butter

  • 125g couscous (or amount indicated on box)

  • 200g feta cut into small cubes


  1. Simmer sweet potato and peas in the stock or boiling water for around 8 minutes.
  2. Pour stock/water and vegetables over the couscous (enough to cover it well), stir in the butter, cover and leave for a couple of minutes.
  3. Once stock/water has been absorbed, use a fork to fluff up the couscous and separate it out.
  4. Stir in the feta and serve.
