Bacon, spinach and pea carbonara

  • 2 egg yolk

  • 2 handfuls spinach chopped

  • 1 tbsp oil

  • 1 handful parsley chopped

  • 6 slices streaky bacon or one of those little packs of pancetta cubes

  • 2 cloves garlic finely chopped

  • 300g pasta

  • 3 tbsp frozen peas

  • 3 tbsp creme fraiche


  1. Bring a huge pot of water to the boil and salt vigorously when boiling. Throw in the pasta, stir and leave to cook according to the packet.
  2. Whilst the pasta is cooking, fry the bacon/pancetta pieces in the oil until starting to brown and crisp. Turn heat down, add garlic, cook for 30 seconds, add peas (don't thaw) and spinach. Stir happily for a minute or so until the peas heat through and the spinach wilts.
  3. Add crème fraiche to the pan and warm through. Put to one side.
  4. Drain the pasta when cooked, leaving perhaps a couple of tbsp cooking water in.
  5. Off the heat, stir in egg yolks, they will cook very gently in the heat of the pasta.
  6. Tip into the sauce, stir gently and serve.
