Tortilla (spanish omelette)

  • 1 medium onion (optional)

  • 4 tbsp olive oil

  • 6 medium eggs

  • 4 medium potatoes (preferably King Edward or Desire)


  1. Peel the potatoes and cut them in small dice sizes, alternatively slice them in thin rounds. Rub them with a kitchen towel to get them as dry as possible. Chop the onion.
  2. Heat the olive oil in the frying pan and add the potatoes and onion, toss them around and turn the fire down, continue turning them for 10 minutes or until soft. Sprinkle enough salt and pepper.
  3. Whisk the eggs lightly with a fork in a large bowl. Transfer the potatoes to the bowl mixing them together evenly.
  4. Put the frying pan back on to medium heat. Add the mix into the pan and turn the heat to the lowest point for 15 minutes.
  5. When almost set, turn over the omelette to cook on the other side by inverting it on a plate and sliding it back gently into the pan. Cook it for 3 more minutes. Turn the heat off and let it rest for an additional 2 minutes.

Handy Hint

Cut in wedges and serve hot or cold with a side salad if desired.

    Ace! The best recipe I have tried as a tortilla fan. It took a lot longer to cook though on my stove, but it very easy to whip up and tastes lovely.

    simple and very nice recipe as a starter always a success, children tend to like it a lot.
