Orange and lime biscuits

  • 110g self-raising flour

  • 70g caster sugar

  • 1/2 lime rind grated

  • 1/2 orange rind grated

  • 1 large egg yolk

  • 85g butter


  1. Preheat oven to 180C/Gas Mark 4.
  2. Sieve flour with the sugar, and then rub in the butter.
  3. Add the orange and lime rind and then the egg yolk.
  4. Knead until the mixture is smooth then roll out into a sausage. Wrap your mixture in cling film and refrigerate for 20 minutes.
  5. Cut the biscuits into small rounds (about 1cm thick) and place them on a greased baking sheet.
  6. Bake the biscuits in a moderate oven for 12 minutes. Allow them to cool and then place them on a rack.
