Vanilla fudge

  • 3oz caster sugar

  • 1/2 tsp vanilla essence

  • 1 pinch salt

  • 1 tbsp cocoa powder

  • 3 tbsp condensed milk

  • 4 tbsp water

  • 1oz margarine


  1. Place all ingredients except vanilla, into a pan.
  2. Bring gently to the boil on a low heat, stirring gently until sugar is dissolved.
  3. Continue to boil for about ten minutes until it reaches “soft ball” stage (this means that when you drop a little bit into a glass of water it forms a soft ball).
  4. Take pan off heat and gently stir the vanilla essence in.
  5. Let the mixture cool slightly then beat well until it is thick and creamy.
  6. It will be almost setting at this stage so pour quickly into a greased tin.
  7. Press down firmly and mark into squares.
  8. Place into fridge overnight to set.

    Tastes great, with a good fudge texture. Easy to adapt the flavourings and add raisins, cherries, walnuts and chocolate chunks.
