  • 1 vegetable stock cube

  • 1 yellow pepper washed and roughly chopped

  • 1 green pepper washed and roughly chopped

  • 1 red onion washed and roughly chopped

  • 1 chilli (optional)

  • 1 red pepper washed and roughly chopped

  • 1 celery stick washed and roughly chopped

  • 1 carrot washed and roughly chopped


  1. Place all the vegetables in a large pan.
  2. Make up the vegetable stock and cover the chopped veg until approx 1 inch below the level of the veg.
  3. Bring to the boil then simmer until the celery is slightly softened.
  4. Blitz with a blender to your required consistency.
  5. Sprinkle on any desired chopped herb(s).
  6. Accompany with a warm crusty roll if desired.

Handy Hint

Do not cover the chopped veg with stock as it will go too thin.

    Easy to make, simple and quick to cook , can be made in bulk and kept in fridge for 3 days and used as a very low calorie(almost negligable)but filling snack when dieting.
