Courgette frittata

  • 1 onion sliced into 1/4 inch rounds

  • 1 handful cheese grated

  • 6 eggs beaten

  • 1-2 cloves garlic peeled and chopped (optional)

  • 2 medium courgettes sliced into 1/4 inch rounds

  • 1 tomato sliced


  1. Heat up a glug of oil in a frying pan on medium heat.
  2. Add the onion and courgette slices and the chopped garlic, if using, into the frying pan and season with salt and pepper.
  3. Fry the onion and courgette slices for about 10 minutes, or until all the onion and courgette slices have become tender and golden. Preheat grill to high.
  4. Add the beaten eggs to the pan and stir/mix it in with the fried onion and courgette slices. When the egg mixture is bubbling around the edges, turn heat down to low and let the mixture cook for another 10 minutes or so until the egg mixture is set all around except for the top part.
  5. Add the tomato slices onto the top part of the egg mixture, and then top with the grated cheese.
  6. Place the frying pan with the egg mixture in it under the grill for a few minutes until the top part of the egg mixture is set and the cheese is melted, then remove the pan from the grill and serve.

Handy Hint

Watch that the heat is not too high during cooking as the eggs will burn.

    This recipe can be altered to a dairy-free version by omitting the grated cheese (if you do so you might wish to omit the tomato slices as well, but that's entirely up to you). If you do this you can cook the dish in advance and then eat it cold or take it along to picnics.
