  • 1/4 onion peeled and sliced

  • 1/4 tsp unsalted butter

  • 1 chicken breast boneless and diced roughly

  • 1 red pepper washed, de-seeded and chopped

  • 1 carrot washed, peeled and sliced

  • 3 tbsp rice washed and soaked for 5 mins


  1. Put everything except the butter into a pan and cover with at least half an inch of water .
  2. Bring to the boil and simmer until vegetables softened and chicken cooked.
  3. Blend with butter and serve.

Handy Hint

Alternatively use a pressure cooker. Takes about 6 mins. You could add a tablespoon of red lentils to this as well if there isn't enough chicken.
