Easy spinach lasagne

  • 1 onion

  • 1 tbsp tomato puree

  • 1 slice bread (optional)

  • 2 tins chopped tomato

  • 1/2 tsp nutmeg

  • 500g fresh spinach (or 1 tin)

  • 1 box lasagne sheets

  • 40g strong cheddar cheese (plus extra for topping)

  • 1 clove garlic crushed

  • 1 tbsp herbs (eg basil, oregano, thyme)

  • 600g low fat cottage cheese


  1. Fry the onion and garlic until soft, then add the tinned tomatoes and tomato puree, season with salt and pepper and add the herbs and simmer while you get the rest of it together.
  2. Wash the spinach and chop it roughly. Put it in a bowl, covered, then cook in the microwave for one minute.
  3. Add the spinach to the cottage and cheddar cheeses and grate the nutmeg over the top. Season with salt and pepper.
  4. Put a layer of the tomato mixture on the bottom of a casserole dish, then a layer of lasagne sheets (even if the packet says so, there is no need to pre-cook them) and then a layer of the cheese/spinach mixture and so on, until you've run out of everything.
  5. If you are using the optional slice of bread, stick it in your baby's blender (sorry if your babies are now children and this is in the loft) and whizz up until you have breadcrumbs. Mix together with the extra cheddar cheese and sprinkle it on top.
    Stick it in a medium oven for 30-40 mins.
  6. That's it, easy spinach lasagne.

    Even though it's vegetarian, I am not and, it's really good comfort food without containing a huge amount of calories (it's 4.5 ww points per 1/4 of the recipe if anyone's counting).
