Warm seared salmon salad with water cress, almond and pink grapefruit salsa

  • 1 tbsp vegetable oil

  • 2 tbsp runny honey

  • 1 tbsp whole grain mustard

  • 4 tbsp extra virgin olive oil

  • 2 large pink grapefruit

  • 75g flaked almonds

  • 600g salmon fillets skin on

  • 1 clove garlic crushed

  • 2 bags watercress washed

  • 1 red chilli deseeded and finally chopped


For the salmon:

  1. Heat a large frying pan with vegetable oil. Once the pan is hot, season the salmon supremes on both sides with salt and pepper.
  2. Place the salmon in the pan, skin side down, turn down the heat and allow to cook for 5-6 minutes.
  3. Turn the salmon over, add a squeeze of grapefruit juice and leave to cook on the other side for a few minutes before turning the heat off and leaving the salmon to cool. In the meantime, make the salad dressing.

For the dressing:

  1. Mix the honey, mustard and crushed garlic in a bowl. Season with salt and pepper.
  2. Next, take the grapefruit you used whilst cooking the salmon and squeeze the remaining juice into the dressing. Mix together well before slowly adding in the olive oil, stirring all the time. The dressing should be quite thick. You can add more honey or grapefruit juice to suit your taste.
  3. In another small frying pan, pour in the almonds and toast until they start to brown slightly. Remove from the pan and leave to one side.
  4. With the remaining grapefruit, top and tail so you have two flat ends. Now remove all the skin, and pith using a small sharp knife. Hold the peeled grapefruit by its flat sides and cut out each segment. You should be left with peel and segments of pink grapefruit.
  5. Next, mix the finely chopped, seedless chili with these segments.
  6. To serve, mix the Florida grapefruit segments and chilli with the washed watercress. Dress with half of the dressing. Place in the centre of a big bowl and lay the cool salmon on top. Finally, sprinkle with the toasted almonds, adding a final drizzle of dressing to finish.
