  • 85g self-raising flour

  • 85g caster sugar

  • 2 tbsp caster sugar (for decoration)

  • 3 eggs

  • 4 tbsp jam (or more, to cover sponge)


  1. Whisk together the eggs and sugar for about 10 minutes until very pale and thick.
  2. Fold in the flour and then spoon into a greased tin.
  3. Bake in a preheated oven at 200C/Gas Mark 4 for about 10 minutes until well risen and firm to the touch.
  4. Sprinkle a clean tea towel with caster sugar and transfer the cake onto the towel.
  5. Add the jam to the sponge then roll up the cake in the tea towel.

    This recipe is FANTASTIC. It is really simple, light and delicious. I filled it with a mixture of cream with crushed raspberries and sugar and it was gorgeous.
