Quick lemon pudding

  • 115g self-raising flour

  • 1 tsp vanilla extract

  • 115g caster sugar

  • 115g soft butter

  • 2 eggs

  • 2 tbsp lemon curd


  1. Mix all the ingredients (except lemon curd) together until well combined ideally with electric mixer.
  2. Place in a microwavable bowl and microwave on full power for 3 minutes until risen and firm.
  3. Set aside for 1 minute.
  4. Microwave 2 tbsp lemon curd for 30 seconds until melted and runny.
  5. Turn out sponge and drizzle with the lemon sauce.

Handy Hint

Serve with creme fraiche or ice cream.

    This went down really well with the family, and was quick and easy to make from storecupboard ingredients, Ideal if you have had to stretch the main meal due to unexpected guests!!!
