Melon and feta salad

  • 1 melon peeled and cubed

  • 1 lemon wedges

  • 150g pumpkin seeds tossed in a little olive oil and toasted under the grill until golden

  • 300g feta cubed


  1. Mix the melon, feta and toasted pumpkin seeds
  2. Add a good grinding of black pepper
  3. Drizzle with olive oil. Serve with a wedge of lemon.

Handy Hint

Be very careful not to burn the pumpkin seeds; they take seconds to do.
