  • 32g self-raising flour

  • 125ml milk

  • 1 large onion chopped

  • 100g cheese grated

  • 3 eggs

  • 1 tin creamed corn

  • 2 potatoes cooked and cubed

  • 1 tbsp butter


  1. Cook the onion in the butter until tender but not brown.
  2. Add the cubed potato and heat through. Mix the milk, eggs, salt and flour until blended.
  3. Combine with the onion mixture, the creamed corn and the cheese, and pour into a well-greased pie/ flan dish.
  4. Bake at 210 degrees celsius for 20-30 minutes or until filling is set in the centre.

Handy Hint

Extra cheese is lovely sprinkled on top too.

    A tin of asparagus spears is a nice alternative to the creamed corn.
