  • 1 pepper red or yellow, diced

  • 1 courgette diced

  • 25g cheese

  • 300g pasta cooked

  • 1 carrot diced

  • 3 tomatoes skinned, deseeded and chopped

  • 1 handful mushrooms chopped


  1. Melt a large knob of unsalted butter in a pan.
  2. Add all the vegetables, apart from the tomatoes, and cook for 5 minutes until soft.
  3. Add the tomatoes and cook for a further 5 minutes or until all soft.
  4. Stir in the cheese until melted.
  5. Purée to desired consistency and serve with pasta.
