Cheese star biscuits

  • 1 egg yolk

  • 1 tbsp full fat milk

  • 75g wholemeal flour

  • 1 pinch celery salt or sea salt

  • 25g sesame seeds or linseeds

  • 150g butter softened

  • 100g plain flour plus extra for dusting

  • 50g mature cheddar cheese finely grated

  • 175g Parmesan finely grated


  1. Beat the butter with the cheeses in a bowl until well combined.
  2. Add the flours and salt and stir to mix.
  3. Mix in the egg yolk and oil to form a soft dough.
  4. Wrap the dough in cling-film and chill for 30 minutes.
  5. Meanwhile, preheat the oven to 180C/350F/gas mark 4.
  6. Remove the dough from the refrigerator, unwrap it and roll it out on a floured work surface.
  7. Using a star-shaped pastry cutter, cut out 35 stars, re-rolling the trimmings where possible.
  8. Place the biscuits on a non-stick baking sheet, brush with the milk and scatter with the seeds.
  9. Bake for 12-15 minutes until golden.
  10. Remove from the oven and leave to cool on a wire rack.

Handy Hint

If you don't have the time to make the stars you can just roll little balls and take a fork to make a nice mark in them and to flatten them a bit.

    Hmm yes i see that the oil referred to in the method is missing in the ingredients list. I think that with all the fat from the cheese and butter that the oil is possibly unnecessary. But if you get to that stage and the dough is too stiff a drop of oil wouldn't hurt.

    Being daft here - it says add oil, but I can't see this in the list of ingredients. Dying to make it too!
