  • 8oz self-raising flour

  • 2oz butter

  • 1 tsp bicarbonate of soda

  • 4oz caster sugar

  • 7fl oz milk

  • 4 tbsp golden syrup

  • 2 tsp ground ginger

  • 1 eggs


  1. Heat oven to 150C/Gas Mark 2.
  2. Melt butter and syrup gently.
  3. Beat the egg into the milk.
  4. Sieve dry ingredients and pour in the butter/syrup mix. Beat in the egg and milk.
  5. Bake for 1 hour in square tin lined with greaseproof paper.
  6. Keeps very well in foil - gets moister and stickier.

Handy Hint

Cover with foil if browning too much as it is quite easy to overcook so check after 50 mins and keep oven at 150.

    I adore this recipe! i used light brown sugar instead of caster sugar and the taste is delish.. ive made this cake a couple of times and everyone whom i gave it to loves it.

    I made this cake yesterday for red nose day cake sale and it looks and smells great. I don't make cakes very often and this was really simple to do.

    This recipe was given to me by another Mumsnetter and it is delicious. Easy to make and scrummy. I hope they dont mind me posting it here but it is worth sharing.
