  • 200g self-raising flour

  • 100g butter

  • 100g caster sugar

  • 1 eggs lightly beaten

  • 4 tbsp jam


  1. Heat oven to 190C/170C fan/Gas Mark 5.
  2. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs.
  3. Add egg to bring the mixture together to form a stiff dough.
  4. Flour your hands and shape the dough into a tube, about 5cm in diameter.
  5. Cut into 2cm-thick slices and place on a large baking sheet.
  6. Space them out as the mixture will spread when baking.
  7. Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre.
  8. Bake for 10-15 mins until just golden.
  9. Cool on a wire rack.

    I found that making a tube that is 5cm diameter and then 2cm thick slices made the most huge biscuits in the world! I think you could get away with a thinner tube, and thinner slices - will try this next time. Really yummy basic biscuits though. My 6yo made them on her own after the first run through with me.
