  • 1 red onion peeled

  • 500g pork mince

  • 1 handful fresh coriander for the adult version

  • 1 ciabatta

  • 1 tsp fennel seeds

  • 1 red chilli to taste

  • 1 egg beaten


  1. Chop the onion and fry gently to soften. Add to the pork mince and mix in. Add the egg and form into patties.
  2. Fry in oil till cooked through (depends on thickness but usually around 10-15 minutes) and serve in ciabatta with salad, or with ketchup if your kids are like mine!
  3. To make an adult's version add some finely chopped red chilli, a handful of chopped coriander and some crushed fennel seed along with the onion and egg. Then form into patties and fry as above. Both children and adults can have potato wedges or sweet potato chips with this.

    A very easy recipe perfect for school nights .pork burgers are somehowe not as hard or meaty as beef burgers made at home and even my fussiest eater likes them.The children can make them as well which helps to get then to try them.As an adult who likes food with taste the fact that these are easy to adapt for adults means i only have to cook once you can keep yours in the fridge ready to cook till the kids are in bed and then be eating in 15 mins.can also freeze prior to cooking and with a few part baked ciabatta rolls in the cupboard you have a standby meal for another night.
